  • 8 cups water divided
  • 1 ½ cups lemon juice about 8 lemons

Healthy “Hard” Lemonade Cocktail Meal Prep and Storage

Meal Prep: You can meal prep (or make party pitchers) by making the drink and skipping the ice. Then cover (jars are great for this) and store for later.
Storage: Will hold for 2 days in the fridge, or add to the freezer for 2 weeks (it won’t freeze solid thanks to the booze).

We made an easy homemade simple syrup for lemonade that has 0 calories, so you can enjoy this yummy lemonade cocktail without adding excess calories or sugar. And best of all… it's all-natural!
Special Tip: It's easiest to make the lemonade ahead of time, chill and then serve later. The lemonade recipe will make 10 cups (10 servings) and the cocktail recipe will make 1.

Make Ahead Skinny Lemonade:

Homemade Hard Lemonade:

  • 1 cup Skinny Lemonade (above)
  • 1 shot (1.5 oz) vodka
  • ¼ cup club soda
  • lemon slices (optional- for garnish)

Instructions
 

How to Make Skinny Lemonade:

  • In a small saucepan, combine all-natural zero calorie sweetener and 1 cup of water.
  • Bring to boil and stir to dissolve all-natural zero calorie sweetener. Cool to room temperature, then refrigerate until chilled.
  • Squeeze all the lemons, and strain out any seeds, but leave pulp if you like (I do!).
  • In a large pitcher, stir together chilled zero-calorie syrup, fresh lemon juice and remaining 7 cups of water.
  • Chill until you're ready to make skinny lemonade cocktails.

How to Make "Copycat" Mike's Hard Lemonade:

  • To a cocktail shaker or tall glass combine the homemade lemonade and vodka.
  • Shake well or stir with a spoon.
  • Strain into a glass filled with ice (or just fill the tall glass with ice).
  • Pour in the club soda, garnish with a lemon slice, and serve cold.
