How to Make Healthy Mushroom Toasts:
- Heat a large pan over medium heat, and spray with olive oil.
- To the hot pan, add the mushrooms and cook for 5 minutes, until starting to brown.
- Add in the shallot and cook for 3 minutes, then add in the garlic and cook for 2 minutes.
- Next, add in the lemon juice, salt and pepper and toss together.
- Cook until the lemon juice is absorbed.
- Meanwhile, toast the bread to your liking.
- Once the mushrooms have absorbed/cooked off all the liquid, remove from heat and add in 1-2 teaspoons of lemon zest (more if you love lemons).
- Scoop the cooked mushrooms onto the toasted bread, top with parsley and parmesan and serve hot.

- 1 shallot minced
- 4 garlic cloves minced
- 1 lemon zested and juiced
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 2 slices bread (we like rustic Sourdough- pick your favorite)
- 2 tablespoons fresh parsley chopped
- 2 teaspoons parmesan cheese or nutritional yeast for vegan toasts
