Ingredients

  • 1 pound lean ground turkey
  • 1 garlic clove minced
  • 8 sage leaves minced
  • ½ teaspoon lemon zest
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Olive Oil Spray

Instructions

  • Preheat a large skillet over medium high heat, and line a plate with paper towels.
  • In a medium bowl, mix together the ground turkey, garlic, sage, lemon, cumin, chili, salt and pepper. Mix until just combined, overmixing will result in tough sausages.
  • Divide the turkey mixture into six balls, then gently squish each down into flat patties.
  • Spray the preheated skillet with olive oil, and add the breakfast sausage patties to the hot skillet, working in batches as needed.
  • Cook each turkey breakfast sausage patty for 1-3 minutes on each side, pressing down a little to help them retain the flat shape.
  • When browned completely, and cooked through, transfer them to the prepared plate to drain.
  • Serve hot, or add to English muffins, along with eggs and cheese for a yummy breakfast sandwich.
