Ingredients You’ll Need:

  • Olive oil spray
  • ⅓ cup oat flour (or gluten-free oat flour)
  • ⅛ teaspoon salt
  • 2 tablespoons All-Natural Zero Calorie Sugar (see recipe card for more options)
  • 2 eggs
  • ¼ cup 0% Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup water
  • ⅓ cup blueberries

Healthy Blueberry Waffles Meal Prep and Storage

Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

These Low Calorie Blueberry Waffles are just 39 calories and so easy to make.
To make sure you get 8 large waffles, you want the batter thin enough to pour. If you have to help it along with a spoon you will want to add more water.
Special Tip: You can swap out the blueberries for diced strawberries, or halved raspberries and blueberries.

Equipment

Ingredients
 
 

  • Olive oil spray
  • cup oat flour or gluten-free oat flour
  • teaspoon salt
  • 2 tablespoons All-Natural Zero Calorie Sugar
  • 2 eggs
  • ¼ cup 0% Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ cup water (or more as needed to thin out batter)
  • cup blueberries fresh or frozen

Instructions
 

  • Preheat a waffle maker and spray with olive oil.
  • To a large bowl combine the flour, salt, and sugar. Mix together
  • In a separate bowl whisk the eggs, and then add in the greek yogurt, vanilla and water to the the eggs and mix together.
  • Pour the wet ingredients into the dry ingredients and fold together. Then gently fold in the blueberries.
  • Use a 1/3 cup measuring cup to pour the waffles mixture onto the prepared waffle maker.
  • Close and cook until done, following the directions for your waffle maker.
  • Remove the waffle and repeat with the second waffle.
  • Add your favorite toppings and serve your waffles hot – if you like a crispy waffle, pop it in the toaster!
