Ingredients in Healthy Blueberry Waffles
If you don’t have oat flour, you can make your own! Simply add old fashioned oatmeal to a food processor and pulse until pulverized into a flour like substance.
And you can swap out the all-natural zero calorie sugar I used for coconut, date, monk fruit or regular sugar.

- Olive oil spray
- Oat flour (or gluten-free oat flour)
- Salt
- All-Natural Zero Calorie Sugar (see recipe card below!)
- Eggs
- 0% Greek yogurt
- Vanilla extract
- Blueberries (fresh or frozen)
How to Make Healthy Blueberry Waffles
You can easily make these low sugar blueberry waffles for meal prep! Simply make the waffles as directed, cool completely and stack the waffles with parchment paper in-between each.
Add to a freezer bag or container and freeze for later. To reheat simply pop in the toaster just as you would with store-bought waffles.


How to Make Healthy Blueberry Waffles:
- Preheat a waffle maker and spray with olive oil.
- To a large bowl combine the flour, salt, and sugar. Mix together
- In a separate bowl whisk the eggs, and then add in the greek yogurt, vanilla and water to the the eggs and mix together.
- Pour the wet ingredients into the dry ingredients and fold together. Then gently fold in the blueberries.
- Use a 1/3 cup measuring cup to pour the waffles mixture onto the prepared waffle maker.
- Close and cook until done, following the directions for your waffle maker.
- Remove the waffle and repeat with the second waffle.
- Add your favorite toppings and serve your waffles hot – if you like a crispy waffle, pop it in the toaster!
