My recipe of cordon bleu chicken is low in calories, hearty and filling, and goes perfectly with a crunchy salad. I keep things easy and pick up a bag salad from the store when I make this. This baked chicken cordon bleu recipe is sure to be one of your favorites! I recommend prepping several batched (less the Panko crumbs) and freezing them. This way all you have to do it make dinner is defrost, top with Panko and bake!

How to Make a Chicken Cordon Bleu Recipe in the Oven:

  1. Preheat oven to 450 degrees and lightly spray a large, rimmed baking sheet or 9×13 casserole dish with olive oil.
  2. Add the chicken breasts to the prepared baking sheet. Smear the top of each chicken breast with 1/2 to 1 teaspoon of dijon mustard.
  3. Top each with prosciutto, then cheese, then Panko bread crumbs, and finally the chopped thyme. Lightly spray the tops with olive oil and move to the oven.
  4. Bake for 20-25 minutes until the juices run clear and the internal temp is 165 degrees.
  5. Serve hot, right out of the oven.

  • Olive oil spray
  • 4 chicken breasts boneless and skinless
  • 2-4 teaspoons dijon mustard
  • 4 slices prosciutto
  • 1/2 cup Gruyere cheese shredded (provolone cheese also works)
  • 1/2 cup Panko bread crumbs or Gluten-free Panko bread crumbs
  • 1 teaspoon fresh thyme chopped

Instructions
 

  • Preheat oven to 450 degrees and lightly spray a large, rimmed baking sheet or 9×13 casserole dish with olive oil.
