  • Chicken breasts (boneless and skinless)
  • Dijon mustard
  • Prosciutto
  • Gruyere (provolone cheese also works)
  • Panko bread crumbs (or Gluten-free Panko bread crumbs)
  • Fresh thyme

How to Make Low Calorie Chicken Cordon Bleu

I always have so much fun cooking with my TV pal Rachael, and this was an extra fun recipe to make together.

She still talks about this wonderful recipe for chicken cordon blue when I see her, it’s THAT GOOD!

How to Make Skinny Chicken Cordon Bleu:

  1. Preheat oven to 450 degrees and lightly spray a large, rimmed baking sheet or 9×13 casserole dish with olive oil.
  2. Add the chicken breasts to the prepared baking sheet. Smear the top of each chicken breast with 1/2 to 1 teaspoon of dijon mustard.
  3. Top each with prosciutto, then cheese, then Panko bread crumbs, and finally the chopped thyme. Lightly spray the tops with olive oil and move to the oven.
  4. Bake for 20-25 minutes until the juices run clear and the internal temp is 165 degrees.
  5. Serve hot, right out of the oven.

  • 4 slices prosciutto
  • ½ cup Gruyere cheese shredded (provolone cheese also works)
