Ingredients You’ll Need:
- Olive oil spray
- 4 chicken breasts
- 2-4 teaspoons dijon mustard
- 4 slices prosciutto
- ½ cup Gruyere cheese (provolone cheese also works)
- ½ cup Panko bread crumbs (or Gluten-free Panko bread crumbs)
- 1 teaspoon fresh thyme

Healthy Chicken Cordon Bleu Meal Prep and Storage
Meal Prep: You can cook the healthy recipe completely then store for later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Ingredients
- Olive oil spray
- 4 chicken breasts boneless and skinless
- 2-4 teaspoons dijon mustard
- 4 slices prosciutto
- ½ cup Gruyere cheese shredded (provolone cheese also works)
- ½ cup Panko bread crumbs or Gluten-free Panko bread crumbs
- 1 teaspoon fresh thyme chopped
Instructions
- Preheat oven to 450 degrees and lightly spray a large, rimmed baking sheet or 9×13 casserole dish with olive oil.
- Add the chicken breasts to the prepared baking sheet. Smear the top of each chicken breast with 1/2 to 1 teaspoon of dijon mustard.
- Top each with prosciutto, then cheese, then Panko bread crumbs, and finally the chopped thyme. Lightly spray the tops with olive oil and move to the oven.
- Bake for 20-25 minutes until the juices run clear and the internal temp is 165 degrees.
- Serve hot, right out of the oven.

This is a great recipe! I made it tonight and it was so good. I used boneless, skinless chicken breasts and it turned out great. I also used a different cheese, Gruyere, and it was really good.
