Healthy Chicken Taquitos Meal Prep and Storage
Meal Prep: You can make these ahead of time then freeze for later. Just make sure to cook completely to ensure they do not fall apart.
Storage: Will hold for 5 days in the fridge and for 1 month in the freezer.
Reheating: Add to an oven at 200-250 degrees until warmed through. Or to the microwave for 2-3 minutes.

Low Calorie Chicken Taquitos
Equipment
- Air fryer
Ingredients
- Olive oil spray
- 1 small yellow onion minced
- 2 garlic cloves minced
- ¼ cup mild salsa verde or your favorite salsa
- 1 cup shredded chicken
- ⅓ cup shredded cheddar cheese
- 6 corn tortillas
Instructions
- Preheat the air fryer to 400°.
- Heat a skillet on medium heat. Spray with olive oil and add in the onions. Cook for 5 minutes.
- Add in the garlic and cook for 1 minute.
- Turn off the heat, and add in the salsa verde, chicken and cheese. Mix together.
- Steam the tortillas in the microwave according to package (wrap in a wet paper towel and cook for 30-60 seconds until hot and pliable).
- To each tortilla, scoop 3 tablespoons of the filling down the middle of the tortilla. Then roll the tortillas into taquitos.
- Place taquitos seam down in the air fryer basket, making sure they are not touching, and spray with olive oil. (Work in batches if needed.)
- Air fry for 6-9 minutes, until golden brown and crispy. Flip taquitos over, spray with olive oil, and air fry for an additional 3-5 minutes.
