But not everyone is, and I wanted to make a vegetarian Caesar salad dressing recipe.

Ingredients You’ll Need:

  • ½ cup 0% Greek yogurt
  • 4 tablespoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons lemon juice
  • 1 garlic clove
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 tablespoon grated parmesan (optional)
  • 3 tablespoons water

Healthy Vegetarian Caesar Dressing Meal Prep and Storage

Meal Prep: You can easily meal prep this salad dressing and have it ready for all week. Just add all the ingredients to a jar, cover and shake. Then refrigerate, and shake before using.
Storage: Will hold in the fridge for 7 days, does not hold well in the freezer.

Ingredients
 
 

  • ½ cup 0% Greek yogurt
  • 4 tablespoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons lemon juice
  • 1 garlic clove minced
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 tablespoon grated parmesan optional
  • 3 tablespoons water

Instructions
 

  • To a medium bowl combine all the ingredients for homemade Caesar salad dressing.
  • Mix well. If too thick, add 1 tablespoon of water at a time until you reach your desired thickness.
  • Taste, and add more salt or pepper as needed.
  • Store in an airtight container (jars are great for storage) for up to 7 days in the fridge.
