Ingredients You’ll Need:
- 5 pounds gold potatoes
- 2 cups Greek Yogurt
- 2 teaspoons yellow mustard
- 1 teaspoon apple cider vinegar
- 1 cup sweet pickle relish
- 1 teaspoon celery salt
- 1 tablespoon dill
- ½ teaspoon pepper
- ½ teaspoon paprika
- 4 hard boiled eggs
- 3 celery stalks
- ½ red onion

Healthy Potato Salad Meal Prep and Storage
Meal Prep: This recipe is a great meal prep side dish or potluck recipe! Simply make ahead of time (12-24 hours is best) and cover. Then chill in the fridge until ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Low Calorie High Protein Potato Salad
Ingredients
- 5 pounds gold potatoes cut into bite sized cubes
- 2 cups Greek Yogurt
- 2 teaspoons yellow mustard
- 1 teaspoon apple cider vinegar
- 1 cup sweet pickle relish
- 1 teaspoon celery salt
- 1 tablespoon dill
- ½ teaspoon pepper
- ½ teaspoon paprika
- 4 hard boiled eggs peeled and chopped
- 3 celery stalks diced
- ½ red onion diced
Instructions
- Add the potatoes to a large sauce pot, add water and boil on high heat until fork tender. Then drain and set aside.
- While the potatoes boil, add the Greek Yogurt, mustard, apple cider vinegar, sweet pickle relish, celery salt, dill, pepper, and paprika to a large bowl. Add in 2 tablespoons of cold water, and mix well.
- To the potato salad dressing, add the eggs, celery, onion and potatoes.
- Gently mix the potato salad until the dressing coats the potatoes and eggs.
- Cover the potato salad, and refrigerate for at least 4 hours (8-12 hours is better). Serve cold, and store in the fridge for up to 5 days.
