Meal Prep: I love to meal prep this healthy pesto pasta recipe! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers. 
Storage: Will hold for 5 days in the fridge or 1 month in the freezer. 
Reheating: Reheat in the microwave for 1-2 minutes.

Rigatoni Pasta Recipe with Pesto Sauce:

Optional Add-ins for Pesto Pasta Recipes:

  • 1 cup cooked and shredded chicken
  • 4 tablespoons chopped basil
  • ¼ cup nutritional yeast
  • ½ cup mozzarella
  • 4 tablespoons parmesan cheese

Instructions
 

  • Cook the pasta according to the directions on the box.
  • Meanwhile, make the pesto (see link above for directions). If using store-bought, skip this step.
  • Drain the pasta and return to the pot. Add 1/2 cup of pesto to the pot and toss together until coated.
  • Add in any additional ingredients (chicken, basil, nutrition years, cheese) and the remaining homemade pesto sauce.
  • Toss together again, and serve hot.
