- 1 onion
- 1 zucchini

Meal Prep: I love to meal prep this healthy side dish! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers.
Storage: Will hold for 5 days in the fridge.

Low Calorie Pesto Pasta Salad
Ingredients
- 1 12 oz box penne pasta (or gluten free)
- Olive Oil Spray
- 1 onion chopped
- 1 zucchini sliced
- ½ cup frozen peas
- ½ cup Homemade Pesto Sauce (or store-bought)
- 1 teaspoon pepper flakes (optional)
- ¼ cup shredded parmesan or nutritional yeast (optional)
Instructions
- Cook the pasta al dente according to the package.
- Meanwhile, heat a large skillet over medium heat. Spray with olive oil and add in the onions and zucchini.
- Cook the veggies for 8-10 minutes until they start to soften. Turn off the heat and add in the peas.
- Once the pasta is done cooking, drain and add to the skillet along with the Homemade Pesto Sauce and if desired pepper flakes.
- Mix well and move to a large glass bowl. Sprinkle with cheese or nutritional yeast (if you desire) and cover.
- Move the the fridge to chill completely, 1-3 hours. Toss together once more before serving.
