This Low Calorie Peanut Butter Banana Waffles Recipe is low calorie and high protein! Plus it has no added sugar (aside from the bananas) and can be meal prepped for weekday breakfasts! Ingredients You’ll Need:
- 2 bananas
- ¼ cup all-natural peanut butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1¾ cups unsweetened almond milk
- 2 cups all-purpose flour (or gluten free)
- 2 tablespoons all-natural brown sugar substitute (see recipe card)
- 2 teaspoons baking soda
- ½ teaspoon salt
- Olive oil spray

Healthy Peanut Butter Banana Waffles Meal Prep and Storage
Meal Prep: You can make the healthy recipe ahead of time and cook completely then cover and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat in the toaster or in the microwave for 1-2 minutes.

- 2 bananas
- ¼ cup all-natural peanut butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1¾ cups unsweetened almond milk
- 2 cups all-purpose flour or gluten free
- 2 tablespoons all-natural brown sugar substitute
- 2 teaspoons baking soda
- ½ teaspoon salt
- Olive oil spray
Instructions
- Preheat a waffle maker to 200˚F.
- In a medium bowl, use the back of a fork to smash the bananas with the peanut butter. Add the eggs, vanilla, and almond milk and whisk to combine. Set aside.2 bananas, ¼ cup all-natural peanut butter, 2 large eggs, 1 teaspoon pure vanilla extract, 1¾ cups unsweetened almond milk, ½ teaspoon salt
- In a separate large bowl, combine the flour, brown sugar, baking soda, and salt.2 cups all-purpose flour, 2 tablespoons all-natural brown sugar substitute, 2 teaspoons baking soda
- Fold the wet mixture into the dry mixture and mix until just combined.
- Spray the waffle maker with olive oil spray.Olive oil spray
- Spoon 1∕3 cup batter into the waffle maker and cook until lightly browned, according to the manufacturer’s instructions.
- As the waffles are done, transfer them to a baking sheet and place the sheet in the oven to keep warm.
- Repeat to make the rest of the waffles, spraying the waffle maker with olive oil spray before adding the batter each time.
- If you like a crispy waffle, pop it in the toaster for a minute before serving and it will crisp up to perfection.
Topping Ideas for Peanut Butter Banana Waffles:
- Smear peanut butter over the waffles and a drizzle of maple syrup
- Add chopped fresh strawberries for a PB&J waffle
- Top with crumbled bacon and maple syrup
- Drizzle with honey and top with banana slices and chopped nuts
