This Low Calorie Monterey Chicken is just 364 calories and is packed with 60.1g of protein! It’s easy and yummy and can be made quick for weeknight dinners. I even used real bacon (and that is included in the calories!) but you can swap it out for turkey bacon or omit it if you prefer.
Ingredients You’ll Need:
- Olive Oil Spray
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 2 boneless skinless chicken breasts
- ¼ cup Low Calorie BBQ Sauce (see recipe card)

- 1 roma tomato

Healthy Monterey Chicken Meal Prep and Storage
Meal Prep: This is a great meal prep recipe. Make the chicken and cool completely. Then add to meal prep containers and store in the fridge or freezer.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Ingredients
- Olive Oil Spray
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 2 boneless skinless chicken breasts
- ¼ cup Low Calorie BBQ Sauce

- 1 green onion sliced
- 1 slice bacon cooked and crumbled
Instructions
- Heat a pan over medium high heat and spray with olive oil.
- Sprinkle the salt and pepper all over the chicken and then add to the hot pan.
- Cook the chicken for 5-6 minutes. Flip and cook an additional 4-5 minutes until cooked through.
- Pour the barbecue sauce over the chicken, then top with cheese.
- Cover the pan and cook for an additional 2-3 minutes until the cheese melts.
- Top with cooked bacon, tomatoes, and green onions.
- Serve hot.
