- 8 oz Banza Protein Linguine Pasta (or regular linguine)
- Olive oil spray
- 16 sea scallops (about 1 pound, tough side muscle removed, patted dry)
- ⅛ teaspoon salt

- 1 lemon
- 2 cloves garlic
- 10-20 basil leaves

Healthy Scallop Pasta Meal Prep and Storage
Meal Prep: You can prep the scallops ahead of time (cleaning and seasoning) but I recommend making this recipe fresh.
Storage: Leftovers will hold in the fridge for 4 days.
Reheating: You can reheat in a hot pan, sprayed with olive oil. Or in a microwave for 1-2 minutes. However, you will risk overcooking the scallops. This is why there are just 2 servings, as leftovers are unfortunately not ideal.

Low Calorie High Protein Scallop Pasta Recipe
Ingredients
- 8 oz Banza Protein Linguine Pasta (or regular linguine)
- Olive oil spray
- 16 sea scallops (about 1 pound, tough side muscle removed, patted dry)
- ⅛ teaspoon salt
- ¼ teaspoon pepper
- Zest of 1 lemon
- 2 cloves garlic minced
- Juice of 1 lemon
- 10-20 basil leaves
Instructions
- Cook the pasta according to the directions on the package. Then drain and set aside.
- Heat a large nonstick skillet over medium-high heat.
- Spray the scallops with olive oil and sprinkle with salt, pepper and lemon zest. Add to the hot pan.
- Cook until golden brown on the bottom, about 3 minutes.
- Flip scallops and add the garlic to the pan.
- Continue cooking, until browned on the bottom and just cooked through, about 2 to 3 minutes more.
- Remove from heat and stir in lemon juice, and pasta. Toss to coat the pasta with lemon juice.
- Serve hot topped with basil.
