Ingredients You’ll Need:

  • 8 oz Banza Protein Linguine Pasta (or regular linguine)
  • Olive oil spray
  • 16 sea scallops (about 1 pound, tough side muscle removed, patted dry)
  • ⅛ teaspoon salt
  • ¼ teaspoon pepper
  • 1 lemon
  • 2 cloves garlic
  • 10-20 basil leaves

Healthy Scallop Pasta Meal Prep and Storage

Meal Prep: You can prep the scallops ahead of time (cleaning and seasoning) but I recommend making this recipe fresh.
Storage: Leftovers will hold in the fridge for 4 days.
Reheating: You can reheat in a hot pan, sprayed with olive oil. Or in a microwave for 1-2 minutes. However, you will risk overcooking the scallops. This is why there are just 2 servings, as leftovers are unfortunately not ideal.

Lose Weight By Eating
This Low Calorie High Protein Lemon Scallop Pasta is a HUGE portion, and just 435 calories with 36.4g of protein! I'm talking 1/2 a box of pasta per person!
I used Banza protein pasta to make this recipe both low in calories and high in protein. Any pasta will work, but traditional pasta will change the nutrition quite a bit.
Special Tip: If you find that scallops are too expensive, shrimp also work great in this recipe

Ingredients
 
 

  • 8 oz Banza Protein Linguine Pasta (or regular linguine)
  • Olive oil spray
  • 16 sea scallops (about 1 pound, tough side muscle removed, patted dry)
  • teaspoon salt
  • ¼ teaspoon pepper
  • Zest of 1 lemon
  • 2 cloves garlic minced
  • Juice of 1 lemon
  • 10-20 basil leaves

Instructions
 

  • Cook the pasta according to the directions on the package. Then drain and set aside.
  • Heat a large nonstick skillet over medium-high heat.
  • Spray the scallops with olive oil and sprinkle with salt, pepper and lemon zest. Add to the hot pan.
  • Cook until golden brown on the bottom, about 3 minutes.
  • Flip scallops and add the garlic to the pan.
  • Continue cooking, until browned on the bottom and just cooked through, about 2 to 3 minutes more.
  • Remove from heat and stir in lemon juice, and pasta. Toss to coat the pasta with lemon juice.
  • Serve hot topped with basil.
