As I noted above, I used protein pasta to make this recipe (see the recipe card for more information on which brand) but you could use any pasta you like.
Same with the tomatoes and mozzarella, you can get large tomatoes and chop them, and a big ball of mozzarella and cube it.

- Chickpea Penne Pasta
- Low Calorie Pesto (or store-bought)
- Balsamic vinegar
- Salt and pepper
- Cherry tomates
- Mini mozzarella balls (or cubed mozzarella)
- Fresh basil
How to Make Healthy Caprese Pasta Salad
I like serve this healthy pasta salad cold, which is great because it means I can make it ahead of time.
But you can serve it hot or room temperature too. Choose what sounds best to you. No matter how you serve it, this low calorie pasta salad is yummy!


How to Make Healthy Caprese Pasta Salad:
- Cook the pasta to al dente according to the directions on the package.
- Drain and add the pasta to a large bowl, add in the pesto, balsamic vinegar, slat and pepper.
- Toss well to combine and then leave to cool to room temperature for 10-15 minutes.
- Add in the tomatoes, mozzarella and the basil.
- Toss again to combine ingredients, then cover and chill in the fridge for 2-4 hours.
- Serve cold.

- 15 cherry tomates quartered
- 6 oz mini mozzarella balls or cubed mozzarella
- ½ cup fresh basil chopped
