These Low Calorie High Protein Caramel Apple Pancakes are just 380 calories and have 37g of protein per serving! The serving size is 1/2 the batch, and I can get 10 small pancakes, or 6 large pancakes out of each batch. That’s a big serving!

Ingredients You’ll Need

  • 2 apples 
  • 1 teaspoon ground cinnamon
  • ¼ cup water
  • 2 large eggs
  • 2 scoops Caramel Protein Powder (see recipe card)
  • 1 teaspoon baking powder
  • Olive oil spray
  • 2 tablespoons Low Calorie Caramel Sauce (see recipe card)

Healthy Caramel Apple Pancake Meal Prep and Storage

Meal Prep – There are two ways to meal prep these protein pancakes. The first is just to make the apples ahead of time, cool and use later. The second way is to make the entire batch (or several batches) then cool completely. Cut out squares of parchment paper to fit between each pancake, and add single servings to meal prep bags or containers. Move the apples to single serve containers as well.
Storage – Will hold for 5 days in the fridge and a month in the freezer.
Reheating – Add to a baking sheet and add to a warm oven (200-250 degrees) for 20-30 minutes while you get ready in the morning. You can also microwave for 1-3 minutes, and add to a toaster oven. The apples can be reheated in the microwave for 1 minute, or on the stovetop over low heat for 5 minutes.

These Low Calorie Caramel Apple Pancakes are just 380 calories for half the batch! I can get 10 small pancakes out of one batch, but feel free to make 6 big pancakes. Either way, the nutrition is based off 1/2 of the batter.
Special Tip: Adding protein powders is so popular these days, and so I added it to this recipe. You can swap it out for all-purpose flour or oat flour if you prefer.

  • Add the apples, cinnamon, and 1/8 cup water to a small sauce pan.
  • Cover and cook for 30 minutes until mostly softened.
  • Remove 1/2 of the apples from the sauce pot, and move to a blender along with the other 1/8 cup of water.
  • Blend until smooth. Then add in the eggs, protein powder, and baking powder to the blender and pulse until smooth. Let the batter rest for 10 minutes while it thickens.
  • Meanwhile, preheat the oven to the lowest setting (200 degrees or “warm”) and place a baking sheet in the oven.
  • Heat a skillet or griddle over medium heat, and spray with olive oil.
  • Use a 1/4 cup to scoop pancakes onto the hot skillet or griddle.
  • Cook the pancakes until they bubble on top, about 45-60 seconds. Flip and cook them for just a few more seconds on the second side.
  • Transfer the cooked pancakes to the warm cookie sheet in the oven while you work on the rest of the batter.
  • Serve topped with the remaining apples and 1 tablespoon of the Low Calorie Caramel Sauce, or syrup.

Nutrition and Calories in Caramel Apple Pancakes
