These Low Calorie Caramel Apple Pancakes are just 380 calories for half the batch! I can get 10 small pancakes out of one batch, but feel free to make 6 big pancakes. Either way, the nutrition is based off 1/2 of the batter. Special Tip: Adding protein powders is so popular these days, and so I added it to this recipe. You can swap it out for all-purpose flour or oat flour if you prefer.
Add the apples, cinnamon, and 1/8 cup water to a small sauce pan.
Cover and cook for 30 minutes until mostly softened.
Remove 1/2 of the apples from the sauce pot, and move to a blender along with the other 1/8 cup of water.
Blend until smooth. Then add in the eggs, protein powder, and baking powder to the blender and pulse until smooth. Let the batter rest for 10 minutes while it thickens.
Meanwhile, preheat the oven to the lowest setting (200 degrees or “warm”) and place a baking sheet in the oven.
Heat a skillet or griddle over medium heat, and spray with olive oil.
Use a 1/4 cup to scoop pancakes onto the hot skillet or griddle.
Cook the pancakes until they bubble on top, about 45-60 seconds. Flip and cook them for just a few more seconds on the second side.
Transfer the cooked pancakes to the warm cookie sheet in the oven while you work on the rest of the batter.
Serve topped with the remaining apples and 1 tablespoon of the Low Calorie Caramel Sauce, or syrup.
