- 1 English cucumber
- 2 large tomatoes
- 5 radishes
- 2 green onions
- ¼ cup fresh basil
- 1 lime juiced
- ¼ teaspoon salt
- ¼ teaspoon pepper

Meal Prep– This corn salad is the perfect meal prep side dish, or potluck dish! You need to make it ahead and chill it anyhow, so make it 1-2 days before.
Storage– Store in the fridge for 5 days. Does not hold well in the freezer.

Ingredients

- 2 large tomatoes chopped
- 5 radishes quartered
- 2 green onions sliced
- ¼ cup fresh basil chopped
- 1 lime juiced
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- To a large bowl combine the corn, cucumber, tomatoes, radishes, and green onions. Toss well.
- Top with green onions, basil, lime juice, salt and pepper, toss again.
- Cover and chill in the fridge, or serve immediately.
