Healthy Yogurt Eggs Meal Prep and Storage
Meal Prep: It’s not all together easy meal prepping eggs, but you could crack the eggs and add all of the ingredients to a jar and whisk together. Then cover and cook the next day.
Storage: Any leftovers can be stored for later. Store in the fridge for up to 5 days. Not great in the freezer.
Reheating: To reheat, microwave for 1-2 minutes until warmed through.

Equipment
- Skillet
- Rubber spatula
Ingredients
- 3 whole eggs
- 4 egg whites
- ½ cup 0% Greek yogurt
- Salt and pepper to taste
- Olive oil spray
Instructions
- In a medium bowl, add the eggs, egg whites, yogurt, salt and pepper and whisk until smooth.
- Heat a medium pan over medium-low heat and spray with olive oil.
- Pour the egg mixture into the pan.
- Using a rubber spatula, gently pull the eggs to the center of the pan as the bottom starts to set, just until the eggs are set.
- Remove the pan from the heat and immediately move the eggs to 2 plates.
- Serve hot.
