  • ¼ cup dried cranberries
  • ½ avocado diced
  • 2.5 tablespoons Low Calorie Lemon Vinaigrette

Healthy Kale Salads for Weight Loss Meal Prep and Storage

Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.
Serving: If you added the dressing and the salad gets soggy, add it to a sandwich wrap or large tortilla. It’s a great way to salvage leftover soggy salad.

This healthy vegan kale salad with pecans cranberries and avocado is huge, and so filling!
I serve this low calorie kale salad with my Low Calorie Lemon Vinaigrette, but really any vinaigrette would be great in this healthy salad!
Special Tip: You can add in more protein with the 4 protein add-ins below, there are options for vegans, vegetarians, and chicken lovers too.

  • To a large bowl add the kale, 1/2 of the pecans, 1/2 of the cranberries, and the dressing (plus 1/2 of any addition protein add ins).
  • Toss well until the vinaigrette coats all the kale.
  • Move to a plate (or meal prep container) and top with the remaining pecans, cranberries and the avocado (and the remaining 1/2 of the optional protein add ins).
