This healthy vegan kale salad with pecans cranberries and avocado is huge, and so filling!I serve this low calorie kale salad with my Low Calorie Lemon Vinaigrette, but really any vinaigrette would be great in this healthy salad!Special Tip: You can add in more protein with the 4 protein add-ins below, there are options for vegans, vegetarians, and chicken lovers too.
To a large bowl add the kale, 1/2 of the pecans, 1/2 of the cranberries, and the dressing (plus 1/2 of any addition protein add ins).
Toss well until the vinaigrette coats all the kale.
Move to a plate (or meal prep container) and top with the remaining pecans, cranberries and the avocado (and the remaining 1/2 of the optional protein add ins).
