- 2 cups kale
- ¼ cup pecans
- ¼ cup dried cranberries
- ½ avocado diced
- 2.5 tablespoons Low Calorie Lemon Vinaigrette (see recipe card)

Healthy Kale Salads Meal Prep and Storage
Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Low Calorie Kale Salads for Weight Loss
Ingredients
- 2 cups kale stems removes and cut into bite sized pieces
- ¼ cup pecans
- ¼ cup dried cranberries
- ½ avocado diced
- 2.5 tablespoons Low Calorie Lemon Vinaigrette
4 Optional Protein Add-Ins:
- 1 cup Maple Ginger Baked Tofu
- 1 cup Meal Prep Shredded Chicken
- ¼ cup crumbled goat cheese
- ¼ cup garbanzo beans
Instructions
- To a large bowl add the kale, 1/2 of the pecans, 1/2 of the cranberries, and the dressing (plus 1/2 of any addition protein add ins).
- Toss well until the vinaigrette coats all the kale.
- Move to a plate (or meal prep container) and top with the remaining pecans, cranberries and the avocado (and the remaining 1/2 of the optional protein add ins).
