Ingredients You’ll Need:

  • 4 sweet corn cobs 
  • 1 tablespoon butter 
  • 1 teaspoon garlic salt
  • 4 tablespoons 0% Greek yogurt
  • ⅓ cup Cotija cheese
  • 3 tablespoons fresh cilantro
  • ½ teaspoon chili powder
  • 1 lime cut into wedges

Healthy Elotes Meal Prep and Storage

Meal Prep: You can clean the corn ahead of time, but that’s all on prepping before cooking. If you want to make extra however, make the recipe completely then cool and cut the corn off the ears and mix well with the toppings. Add to meal prep containers with your favorite proteins and sides.
Storage: Will hold for 6 days in the fridge.

Healthy Mexican Street Corn makes a wonderful side dish. And you can cut the calories more by halving the corn cobs.
Special Tip: You can make this recipe in the oven or on the grill. This means you can make it year-around. Especially since you can find frozen corn on the cob in most stores.

Ingredients
 
 

  • 4 sweet corn cobs shucked and cleaned
  • 1 tablespoon butter melted
  • 1 teaspoon garlic salt
  • 4 tablespoons 0% Greek yogurt
  • cup Cotija cheese crumbled
  • 3 tablespoons fresh cilantro chopped
  • ½ teaspoon chili powder
  • 1 lime cut into wedges

Instructions
 

  • Preheat the oven to 350 degrees or a grill to medium heat.
  • Place each corn cob into a large piece of foil (individually).
  • Brush with melted butter and sprinkle over the garlic salt.
  • Fold the foil around the corn, sealing to make individual foil packets.
  • Bake or grill for 30-35 minutes until tender.
  • Carefully (with oven mitts on) remove the foil from the corn cobs and brush with greek yogurt.
  • Top with cheese, chili powder and cilantro.
  • Serve with lime wedges to squeeze over the corn.
