  • 2 boneless skinless chicken breasts
  • 1 tomato 
  • 2 oz mozzarella (1/4 cup)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil spray
  • 2 tablespoons chopped basil
  • 2 teaspoons balsamic vinegar (optional)

Ingredients
 
 

  • 2 boneless skinless chicken breasts
  • 1 tomato cut into slices
  • 2 oz mozzarella (1/4 cup) sliced or shredded
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Olive oil spray
  • 2 tablespoons chopped basil
  • 2 teaspoons balsamic vinegar optional

Instructions
 

  • Preheat the oven to 450°.
  • Hasselback the chicken breasts… cut 5 sliced into each chicken breast 3/4 way through.
  • Add the chicken breasts to a 9×9 casserole dish.
  • Stuff each slice with 1 slice of tomato and some cheese.
  • Lightly sprinkle the tops with salt and pepper, and spray with olive oil.
  • Bake for 15-18 minutes, until cooked through with no pink in the center.
  • Top with basil and if you desire, balsamic vinegar and serve hot.
