Meal Prep: You can cook completely, cover and store for later.
Storage: Cover well and store in the fridge for 5 days or the freezer for a month.
Reheating: You can reheat in a oven at 200-250 degrees until warmed through.

Equipment
- Foil, or Foil Packets
Ingredients
- 1 24-ounce bag unpeeled golden baby potatoes (New Potatoes)
- 1 head of garlic with 1/3 of the top trimmed off
- Olive oil spray
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon chopped fresh rosemary
Instructions
- Preheat the grill to high heat.
- Wash the potatoes, and add to a large piece of foil, or foil packet.
- Add the garlic, spray with olive oil, and sprinkle with salt, pepper, and rosemary.
- Close up the foil packet so that it is securely closed.
- Add the packet to the BBQ, and grill for 45-60 minutes, until the potatoes are soft in the center.
- Carefully (with oven mitts on, the steam is HOT) open the foil packet, and tumble the potatoes into a serving dish to stop the cooking.
- Serve hot, or cool and slice… these are wonderful in potato salad, over salads (in place of croutons) or just cold out of the fridge.
