- 3Β mashed bananas
- 1Β teaspoonΒ vanilla extract

Healthy Banana Muffins Meal Prep and Storage
Meal Prep: You can easily meal prep these! Simply add muffins to sandwich bags and freeze or refrigerate for later.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the muffins to the microwave for 1-2 minutes.

Low Calorie Banana Muffins
Equipment
- Muffin tin
IngredientsΒ Β
- 2 cups flour
- 1 teaspoon baking soda
- ΒΌ teaspoon salt
- β cup coconut oil
- Β½ cup maple syrup
- 2 eggs beaten
- 3 mashed bananas
- 1 teaspoon vanilla extract
Optional Toppings
- 1 banana sliced
- 1 tablespoon walnuts
InstructionsΒ
- Preheat oven to 350 degrees F and grease a muffin pan, or add muffin liners.
- In a large bowl, combine flour, baking soda and salt.
- In a separate bowl, mix together the coconut oil and maple syrup. Mix in the eggs, vanilla and mashed bananas.
- Stir banana mixture into flour mixture until just combined. Pour batter into prepared muffin tins.
- Bake for 20 to 25 minutes, until a toothpick inserted into center of the muffin comes out clean. Let the banana muffins cool in pan for 10 minutes, then turn out onto a wire rack.
Optional Toppings
- Before baking the banana muffins, top with optional toppings.
