Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • ΒΌ teaspoon salt
  • β…“ cup coconut oil
  • Β½ cup maple syrup
  • 2 eggs beaten
  • 3 mashed bananas
  • 1 teaspoon vanilla extract

Optional Toppings

  • 1 banana sliced
  • 1 tablespoon walnuts

Instructions
Β 

  • Preheat oven to 350 degrees F and grease a muffin pan, or add muffin liners.
  • In a large bowl, combine flour, baking soda and salt.
  • In a separate bowl, mix together the coconut oil and maple syrup. Mix in the eggs, vanilla and mashed bananas.
  • Stir banana mixture into flour mixture until just combined. Pour batter into prepared muffin tins.
  • Bake for 20 to 25 minutes, until a toothpick inserted into center of the muffin comes out clean. Let the banana muffins cool in pan for 10 minutes, then turn out onto a wire rack.

Optional Toppings

  • Before baking the banana muffins, top with optional toppings.
