- 1 tablespoons dark chocolate chips (or vegan chocolate chips)

Meal Prep: You can easily meal prep these! Make the rice cakes, and add to a plate. Place in the fridge until the topping hardens. Then move to sandwich bags and add to a lunchbox, or to the fridge for later.
Storage: Will hold in the fridge for 5 days.

Low Calorie Chocolate Rice Cakes
Ingredients
- 1 rice cake
- 1 tablespoon peanut butter or favorite nut butter
- 1 tablespoons dark chocolate chips or vegan chocolate chips
10 Optional Chocolate Rice Cake Toppings:
- 1 pinch salt
- 1 teaspoon chia seeds
- ½ banana sliced
- 2 strawberries sliced
- 10 blueberries
- 1 tablespoon flaked coconut
- 1 tablespoon chopped peanuts
- 1 tablespoon chopped almonds
- 1 tablespoon Homemade Granola
- 1 tablespoon All-Natural Rainbow Sprinkles
Instructions
- Add the peanut butter and chocolate chips to a microwave safe bowl.
- Microwave in 30 second increments, stirring in-between, until the chocolate is melted.
- Spread the chocolate and peanut butter mixture over the rice cake.
- Add any toppings, and serve.
