Healthy Chicken Salad with Cranberries Meal Prep and Storage
Meal Prep: This is a great meal prep lunch! Make the chicken salad at the beginning of the week, add to a bowl and cover. Store in the fridge to make sandwiches, wraps, or add a serving to a plate of baby spinach.
Storage: Will hold in the fridge for 5 days, does not hold well in the freezer.

Ingredients
- 2 cups shredded chicken pre cooked and cooled
- ½ cup Greek yogurt
- 1 tablespoon dijon mustard
- 2 stalks celery diced
- 2 green onions sliced
- 2 tablespoons dried cranberries
- 1 tablespoon slivered almonds
- ½ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Add all of the chicken salad recipe ingredients to a large bowl.
- Use the back of a spoon, fork, or a spatula to mix and squish all of the ingredients together.
- Serve as a chicken salad sandwich, chicken wrap, cranberry chicken salad over greens… any way you like.
