This Low Calorie Caprese Salad recipe can be made in under five minutes. The healthy caprese salad makes a wonderful side dish, or light meal.
Ingredients You’ll Need:
- 2 large tomatoes
- 6 thin slices of Mozzarella
- ½ cup basil leaves
- 1 teaspoon Extra Virgin olive oil
- 1 tablespoon Balsamic vinegar
- ¼ teaspoon salt
- ⅛ teaspoon pepper

Meal Prep: You can meal prep this recipe by making the salad but holding back on the dressing. Add it just before serving.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Ingredients
- 2 large tomatoes sliced
- 6 thin slices of Mozzarella
- ½ cup basil leaves torn or sliced
- 1 teaspoon Extra Virgin olive oil
- 1 tablespoon Balsamic vinegar
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Plate the tomato slices and mozzerella alternating, as shown in photo.
- Rip the basil into small pieces and sprinkle over the salad.
- Drizzle over oil and vinegar and add salt and pepper.
- Serve cold or room temperature.

Great question! A normal caprese salad has between 166-220 calories, but I was able to get the calories down to just 82 calories 🙂
