- 1 (16-oz) can refried beans
- Ā½ cup Low Calorie Salsa (or store-bought)
- Ā¼ medium yellow onion minced
- Ā½ teaspoon paprika
- Ā½ teaspoon garlic powder
- Ā¼ teaspoon salt
- Ā¼ teaspoon pepper
- Ā½ cup shredded low fat cheddar cheese
- 4 (10-inch) flour tortillas (burrito sized)
Optional Add-Ins:
- Green Salsa
- Pickled JalapeƱos
- Hot Sauce
- Cooked and Shredded Chicken
- Cooked and Shredded Beef
InstructionsĀ
- Preheat an oven to 350 degrees and line a baking sheet with parchment paper.
- To a medium bowl combine the beans, salsa, onion, paprika, salt, and pepper. Mix well and set aside.
- Lay a tortilla on a cutting board and add 1/2 cup of bean mixture to the center. Spread so that it is covering the center of the burrito, then top with 1/8 cup of cheese, and then add any optional add-ins you choose.
- Fold the bottom and top edges of the tortilla over the filling. Then fold in the sides and finish by rolling the tortilla up.
- Continue filling and rolling the burritos, adding to the prepared baking sheet as you work.
- Bake in the oven for 15 minutes, and serve hot.
Meal Prep Burritos:
- Roll up the burritos as directed, but do not bake. Instead wrap each in parchment paper, and place in a freezer bag or container.
- Store in the fridge for 5 days or the freezer for 2 month.
- To reheat ā add a defrosted burrito to a parchment paper lined baking sheet and bake at 350 degrees for 15 minutes. Or add to the microwave and cook for 1-2 minutes. For frozen burritos, add to the microwave and cook for 2-4 minutes, flipping once.
