Meal Prep: You can meal prep this healthy recipe easily. Make the Cole slaw and the BBQ chicken ahead of time and add to containers. Then all you need to do is heat the chicken and assemble the sandwiches.

Ingredients
Low Calorie BBQ Chicken Sandwiches:
- 1 boneless skinless chicken breast
- Olive oil spray
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup Low Calorie BBQ Sauce or store-bought
- 2 Low Calorie Burger Buns or store-bought
- 1 cup Low Calorie Coleslaw below
Low Calorie Cole Slaw:
- 1 cup Cole slaw mix
- 2 tablespoons 0% Greek Yogurt
- 1 teaspoon apple cider vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon brown sugar
- ¼ teaspoon lemon juice
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- To a medium bowl combine the Cole slaw ingredients and mix well. Cover and place in the fridge for 30 minutes to an hour.
- To a skillet over medium heat, spray with olive oil and add the chicken breast. Sprinkle with salt and pepper and cook for 5 minutes on each side until cooked through with no pink in the center.
- Move the chicken to a plate and shred with 2 forks.
- Add the chicken back to the skillet along with the BBQ sauce, and heat on low for 5 minutes until the sauce is hot.
- To assemble the sandwiches, slice the buns in half, and add 1/2 of the chicken to the bottom half. Top each with 1/2 of the Cole slaw, and finally the top half of the bun.
- Serve hot.
