Healthy Baked BBQ Chicken Drumsticks Meal Prep and Storage

Meal Prep: You can meal prep 2 ways. You can cook the healthy recipe completely then store for later, or add the ingredients to a bag, mix and add to the freezer for later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

I supplied you with my low calorie BBQ sauce recipe to make this healthy dish. But you can also use store-bought BBQ sauce.
Special Tip: I like marinate the chicken legs for 24 hours, it makes them so delicious. So when you get home from weekly shopping, add the chicken legs to a bag with the BBQ sauce and marinate them in the fridge or freezer unit you're ready to cook them later this week.

Equipment

  • Rimmed Baking Sheet

Ingredients
 
 

  • Olive oil spray
  • 2 pounds chicken drumsticks (12 chicken legs)
  • ½ cup Low Calorie BBQ Sauce
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Preheat oven to 425 degrees. Spray a rimmed baking sheet with olive oil.
  • To a gallon freezer bag combine the chicken legs and the Low Calorie BBQ Sauce. Close and squish to mix together, and marinate in the fridge for 1-24 hours
  • Arrange chicken on the baking sheet, sprinkle with salt and pepper and lightly spray the tops of the chicken with olive oil.
  • Bake for 40-45 minutes or until a thermometer reads 165 degrees. Serve hot with more BBQ sauce on the side.
