Low Calorie High Protein Avocado Ice Cream
Equipment
- High Speed Blender OR Food Processor
Ingredients
- 1 cup unsweetened almond milk
- 2 scoops vanilla protein powder
- 2 tablespoon all-natural zero calorie sweetener
- 1 avocado
- 2 cups spinach
- 4 cups ice
Optional Add-Ins:
- 4 tablespoons dark chocolate chips
- 4 tablespoons flaked coconut
- ¼ teaspoon peppermint extract try the chocolate and peppermint together for mint chocolate chip!
- 4 tablespoons chopped pecans
Instructions
- Add all the ingredients to a high speed blender or food processor.
- Pulse to get things moving, then blend until smooth.
- Scrape the ingredients down as needed to blend well.
- Scoop into a lidded container or a bread pan, and cover with plastic wrap.
- Freeze for 1-2 hours until firm, then scoop and serve.
- Special Note: If you're adding in some optional add-ins you may want to hold 1/2 of the chocolate chips, coconut, or pecans to top the avocado ice cream with. This will give it a nice texture.
