Ingredients
 
 

  • ½ avocado
  • 1 teaspoon lime juice
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 tablespoon cilantro (minced)
  • 1 10 inch vegan tortilla (or whole wheat)
  • ½ carrot (grated)
  • ¼ bell pepper (sliced)
  • 2 red onion slices
  • 2 tomato slices
  • 4 cucumber slices
  • ¼ cup mixed greens

Instructions
 

  • In a medium bowl, add the avocado, lime juice, salt, pepper, and cilantro. Use a fork to smash the avocado until mostly smooth.
  • Smear the avocado mixture all over one side of the tortilla.
  • Add the carrot, bell pepper, red onion, tomato, cucumber, and mixed greens.
  • Wrap up the tortilla like a sushi hand roll, where the bottom is narrow and top wide.
  • Serve immediately, or add to a container and take with you in your lunch box.
