(or whole wheat)

carrot

Instructions
In a medium bowl, add the avocado, lime juice, salt, pepper, and cilantro. Use a fork to smash the avocado until mostly smooth.
Smear the avocado mixture all over one side of the tortilla.
Add the carrot, bell pepper, red onion, tomato, cucumber, and mixed greens.
Wrap up the tortilla like a sushi hand roll, where the bottom is narrow and top wide.
Serve immediately, or add to a container and take with you in your lunch box.
