This Low Calorie Tuna Pasta Salad is just 173 calories and so easy to make!Perfect for light meals and potlucks, you can have a small serving or Special Tip: I like to use frozen vegetables in this recipe for 3 reasons. It lowers the cost, saves me time chopping, and I add the frozen veggies in still frozen to help chill the salad faster!
Ingredients
- 1 (12-oz) box elbow pasta
- 1 6 ounce can tuna in water drained
- 2 tablespoons red onion chopped
- 1 cup little tomatoes halved
- 2 celery stalks chopped
- ½ cup frozen peas carrots and corn medley
- ¼ cup sliced red cabbage
- 1 tablespoon fresh parsley chopped
Dressing:
- ½ cup 0% Greek yogurt
- ½ tablespoon dijon mustard
- ½ lemon juiced
- 2 tablespoons water
- 1 tablespoon of fresh dill minced
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Boil a large, salted pot of water for your pasta. Cook it al dente according to package directions.
- Meanwhile, make the dressing in a medium bowl by combining all the ingredients and mixing well.
- Once the pasta is cooked, rinse it under cold water and drain, then move to a large mixing bowl.
- Add the tuna, red onion, tomatoes, celery, frozen vegetables, and cabbage.
- Top with the dressing and mix well until everything is coated.
- Sprinkle the parsley over the top. Then cover the pasta salad and chill in the fridge for 1-3 hours before serving.
