Everything Youāll Need
- 4-5Ā Roma tomatoes
- 1Ā cucumber
- 1Ā red bell pepper
- 2Ā stalks of celery
- 1Ā shallot
- 2Ā garlic cloves
- 2Ā tablespoonsĀ sherry vinegar
- 1Ā tablespoonĀ lemon juice
- 1Ā teaspoonĀ salt
- Ā½Ā teaspoonĀ pepper
- Ā½Ā teaspoonĀ ground cumin

Healthy Gazpacho Soup Meal Prep and Storage
Meal PrepĀ ā Make the soup and then scoop single servings into individual containers, or family sized servings into gallon freezer bags (or jars/containers with lids).Ā
Frozen SoupĀ ā Be sure any container is only filled 2/3 full as the soup will expand in the freezer. Store for up to a month in the freezer. If freezing gallon bags, lay flat to freeze to save storage room.Ā
Refrigerated SoupĀ ā Will hold in the refrigerator for 4 days.

Equipment
- High Speed Blender OR Food Processor
IngredientsĀ Ā
Gazpacho Ingredients:
- 4-5 Roma tomatoes
- 1 cucumber
- 1 red bell pepper
- 2 stalks of celery
- 1 shallot
- 2 garlic cloves
- 2 tablespoons sherry vinegar
- 1 tablespoon lemon juice
- 1 teaspoon salt
- Ā½ teaspoon pepper
- Ā½ teaspoon ground cumin
Optional Gazpacho Toppings:
- Croutons
- Drizzle of olive oil
- Chopped cucumber
- Cilantro
- Chopped jalapeƱos
InstructionsĀ
- Halve the tomatoes, core them and remove seeds. Halve and de-seed the cucumber and bell pepper. Add all to a blender or food processor.
- Add the remaining ingredients to the blender or food processor, and puree until you reach your desired consistency.
- Add to a glass container (large mason jars work great) and refrigerate for 3 to 4 hours until completely chilled.
- Serve cold, topped with your desired toppings.
