Ingredients
 
 

Pasta Salad:

  • 1 (12 oz box) tri-color rotini pasta (or gluten free)
  • 1 pint grape tomatoes halved
  • 2 cups cucumber chopped
  • 1 red bell pepper chopped
  • 1 cup black and/or green olives sliced
  • ¼ cup sliced red onion

Pasta Salad Dressing:

  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon crushed red pepper (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Cook pasta according to package instructions to al dente.
  • Meanwhile, add all of the Pasta Salad Dressing ingredients together in a bowl or jar. Whisk or (if using a jar) cover and shake well.
  • Drain the pasta, rinse with cold water and set aside to cool completely.
  • Add the pasta to a large bowl, add tomatoes, bell pepper, olives, cucumber, and red onion.
  • Pour dressing over and toss together until everything is coated in dressing.
  • Cover and chill at least 30 -60 minutes before serving. Add 2 tablespoons of water and toss together again before serving (the pasta will have soaked up the dressing).
