Meal Prep: This is a great meal prep recipe! You will want to chill the dish, so go ahead and make it a day or two before you plan on serving. Then store in an airtight container in the fridge.
Storage: Will hold for 4-5 days in the fridge. Freezer storage is not recommended.

- Glass Bowl
Ingredients
- 1 pound tilapia or shrimp peeled and deveined
- Juice of 7 limes
- 4 cups chopped tomatoes about 5 tomatoes
- 2 Serrano peppers ribs and seeds removed, minced
- ½ white onion minced
- ¼ cup chopped cilantro
Extras:
- Tostadas chips or corn tortillas
- Sliced Avocado
- Lime wedges
- Pico de Gallo
Instructions
- Chop the fish or shrimp, and add to a nonreactive bowl (such as a glass bowl) as you work.
- Squeeze the lime juice over the top, cover and refrigerate for 2 hours. In this time the lime juice will cure the fish or shrimp.
- In a separate bowl combine the tomatoes, Serrano peppers, onion and cilantro, set aside in the fridge to marinate.
- When the fish has a cooked like consistency, pour off most of the lime juice, leaving about 2 tablespoons in the bow.
- Add in the chopped veggies and mix well.
