  • ¼ cup corn starch
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 pound boneless skinless chicken breasts 
  • Olive oil spray
  • 1 yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 8 small dried red chilies
  • 1 clove garlic
  • 1 teaspoon minced ginger

Healthy Szechuan Chicken Meal Prep and Storage

Meal Prep: This is a great meal prep lunch or dinner. Make the chicken and cool completely, then add to meal prep containers with rice or cauliflower rice. Store in the fridge or freezer for later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes. Or on the stovetop in a skillet over medium low for 5-10 minutes.

Szechuan Chicken Sauce:

  • In a medium bowl, combine the chicken, corn starch, salt and pepper. Toss to coat well.
  • Heat a large skillet over medium high heat, and spray with olive oil.
  • Add the chicken to the hot pan and cook until lightly browned, about 5 minutes. Remove to a plate (may not be fully cooked yet).
  • Add the onion, bell peppers, and chillies to the pan and cook until softened, about 5 minutes.
  • While the veggies cook, add all of the Szechuan Chicken Sauce to a medium bowl and mix together.
  • To the veggies, add the garlic and ginger along with the chicken and any juices on the plate.
  • Pour in the Szechuan Chicken Sauce and bring to a simmer.
  • Cook for 3-5 minutes until the sauce thickens and the chicken is completely cooked.
  • Serve hot, over rice, or alone as a low carb Chinese Chicken Dinner.
