This chicken soba recipe is good hot or cold. I like to make extra and enjoy one serving for dinner. Then I pack the remaining servings into meal prep containers for “take to work” lunches all week long.
How to Make Healthy Soba Noodle Salads:
- In a small bowl combine the Soba Noodle Sauce ingredients. Mix well and set aside.
- Bring a large pot of water to boil, and cook soba noodles for 5-8 minutes, stirring occasionally, until tender.
- Drain and rinse under cold water. Set aside
- Combine cooled soba noodles, chicken, bell peppers, cabbage, and cilantro in a large bowl.
- Drizzle the sauce over the salad and toss to coat.
- Top with peanuts and serve.

Ingredients
- 6 oz soba noodles
- 2 cups cooked shredded chicken
- 2 red bell peppers chopped
- 2 cups red cabbage shredded
- ½ cup cilantro leaves chopped
- ¼ cup peanuts
Soba Noodle Sauce:
- 1 lime juiced
- 3 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1.5 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon Sriracha
Instructions
