Scones: 15 Recipes for Scones

Recipes for Scones

Recipes for Scones are easy to make, and come in a lot of different flavors. In the following scones recipes I’ve cut 100’s of calories, making these treats healthier.

What is a scone? A scone is a small slightly sweet baked good made from flour, fat, and milk and sometimes having added fruit. They’re generally crunchy and go especially well with a good cup of coffee

How to Make Recipes for Scones

Recipes for scones are so easy to make – all you need to do is follow the simple directions and bake.

If you don’t have almond milk, any milk or buttermilk will work (though it will change the nutritional info) and you can use either unsweetened applesauce, Greek yogurt, mashed fruit or even baby food as well.

I prefer applesauce as it adds sweetness, so we don’t have to add as much sugar, pick up the little cups of applesauce, they are just about 1/2 a cup and makes for easy baking anytime.

Blueberry Scones Recipe

blueberry scones recipe

In this blueberry scones recipe section you’ll find a more traditional scone recipes blueberry, and below a Lemon Blueberry Scone Recipe.

Scones Recipe Blueberry

The first Blueberry Scones recipe is easy and delicious, and because we use dried blueberries, they store well.

If you want to use fresh or frozen blueberries they will work too, but you will need to cut the amount down to ⅓ cup, and freeze the blueberries solid before adding to the batter so they don’t fall apart.

Blueberry Scones Recipe

For storing, wrap each blueberry scone individually in plastic wrap and they will hold together longer… though they may get soggy, and that is why we recommend dried berries here.

Take out of the oven, let cool on the baking sheet (this helps to keep them cooking) for 10 minutes then you can glaze them.
  • Sift the powdered sugar into a small bowl, add 1 tbsp. lemon juice *(more if it does not run well)* mix with a fork, then summon your inner Jackson Pollock and drizzle the glaze on the scones. STOP, wait a few minutes and drizzle some more, stop again and repeat. If you put it all on at once you will end up with a pool of glaze below and no one wants to waste sugar glaze… right!?

Equipment

  • Mixer
  • Pizza Cutter

Ingredients

  • 3 cups unbleached organic flour
  • ½ cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp unsalted butter
  • ¾ cup almond milk
  • ½ cup unsweetened apple sauce
  • ¾ cup chopped dried cherries
  • ½ cup slivered almonds
  • ¾ cup powdered sugar
  • 1 tsp REAL almond extract

Instructions

  • Preheat your oven to 375 and line a baking sheet with parchment paper.
  • Whisk flour, sugar, baking powder, baking soda and salt together in a large bowl or your big standing mixer. Cut up the butter in small pieces and then add to the flour mix and work with your fingers until they are small as pees.
  • In a separate bowl whisk together the almond milk and apple sauce, pour ½ of into the flour mix and mix together. Then add the rest and the cherries and almonds and mix gently and only until it is all Incorporated, do not over mix it will make them tough.
  • Put some flour down on a clean surface, split the mix in two and put the dough balls onto the floured surface. Squish and mold them into two round discs, now take out your pizza cutter and cut each into 6 slices, just like you are cutting a pizza or a pie.
  • Arrange on the baking sheet, you can get them close together as they don’t really spread but make sure they are not touching. Bake for 15-17 minutes, until they are slightly golden. Take out of the oven, let cool on the baking sheet (this helps to keep them cooking) for 5 minutes then transfer to a wire rack. I like to take the parchment paper I used on the baking sheet to help catch any glaze spill, so place it under the wire rack.
  • Time for the glaze, sift the powdered sugar into a small bowl, add the almond extract and 1 tbsp of warm water (more if it does not run well) mix with a fork, then summon your inner Jackson Pollock and drizzle the glaze on the scones. STOP, wait a few minutes and drizzle some more, stop again and repeat. If you put it all on at once you will end up with a pool of glaze below and no one wants to waste sugar glaze… right!?
