Equipment
- baking tray
Ingredients
- ¼ cup pineapple juice
- ½ cup honey
- ¼ cup brown sugar
- ¼ cup unsalted butter
- 8-10 pound fully cooked ham bone-in or boneless
- ¼ cup whole cloves
Instructions
- Preheat the oven to 425° and line a baking tray or dish with foil.
- In a small pot over medium heat combine the pineapple juice, butter, honey and brown sugar. Cook until the sugar is dissolved.
- Meanwhile, trim away the rind on the ham and discard (not the fat).
- Using a sharp knife score a 1-inch-wide diamond pattern (1/4 inch deep) over the entire ham. Insert cloves into the centre of each diamond. Place the ham in the prepared baking tray.
- Pour 1/2 of the glaze all over the ham, brushing in between the cuts to evenly cover.
- Bake uncovered for 20 minutes.
- Remove from the oven, add the remaining glaze and some of the pan juices, and cook for 15-25 minutes until a dark golden-brown crust has formed, (about 30 minutes total).
- Broil for 2-5 minutes (watch carefully) then remove from the oven.
- Let the ham rest 10-15 minutes before slicing.
