Meal Prep: This is not the best meal prep recipe, the chips will get too soggy and the eggs donā€™t reheat well. But you could make the salsa ahead of time if you like.
Storage: Any leftovers can be stored for later. Store in the fridge for up to 5 days. Not great in the freezer, but you can store single servings for up to 2 weeks in the freezer.
Reheating: To reheat, microwave for 1-2 minutes until warmed through.

Ingredients

  • 1 cup of salsa homemade or store-bought
  • Ā½ cup broth chicken or vegetable
  • 30 corn tortilla chips
  • 1 tablespoon Cotija cheese
  • 4 large eggs

Optional Toppings:

  • 1 avocado sliced
  • Chopped fresh cilantro
  • Hot sauce or salsa
  • Sliced jalapeƱos
  • Sliced green onions

Instructions

  • Heat a large skillet over medium-high. Add in the salsa and broth and cook for 5 minutes, until bubbling.
  • Add in the chips and mix well to coat all over with sauce. Lower the heat to medium.
  • Make 4 wells in the tortilla chips, and crack an egg in each well. Sprinkle all over with crumbled Cotija cheese.
  • Cover and cook for 2-3 minutes for over-easy eggs, or longer on the desired doneness of you eggs.
  • Serve with desired toppings, or just as is.
