Low Calorie “Taco Bell” Mexican Pizzas
Equipment
- Rimmed Baking Sheet
Ingredients
- 1 pound ground lean ground turkey beef or chicken
- 2 tablespoons Taco Seasoning
- ½ cup black beans drained and rinsed
- 6 small tortillas or corn tortillas
- ¾ cup Low Calorie Enchilada Sauce or store-bought
- ¼ cup shredded Mexican Cheese Blend or sharp cheddar cheese
- 1 small tomato diced
- 1 green onion sliced
Instructions
- Preheat the oven to 400 degrees.
- Add the ground meat to a large skillet, cook over medium heat crumbling with a wooden spoon as you work, until browned. Drain any fat.
- Add the taco seasoning and 1/4 cup water and mix well. Cook for 5 minutes until the meat is cooked through.
- To a lined baking sheet, lay out 3 tortillas and top each with 1/3 of the beans.
- Top the beans with the cooked meat, and add 1 tablespoon to the top of the meat.
- Place the remaining tortillas atop the meat and cheese.
- Add 1/4 cup enchilada sauce to the top of each, and sprinkle over the remaining cheese.
- Bake for 10 minutes until the cheese is melted and the edges of the tortillas are browned.
- Remove from the oven top with tomato and green onion and serve.
