black beans
drained and rinsed

Low Calorie Enchilada Sauce
or store-bought

shredded Mexican Cheese Blend
or sharp cheddar cheese

sliced
Instructions
Preheat the oven to 400 degrees.
Add the ground meat to a large skillet, cook over medium heat crumbling with a wooden spoon as you work, until browned. Drain any fat.
Add the taco seasoning and 1/4 cup water and mix well. Cook for 5 minutes until the meat is cooked through.
To a lined baking sheet, lay out 3 tortillas and top each with 1/3 of the beans.
Top the beans with the cooked meat, and add 1 tablespoon to the top of the meat.
Place the remaining tortillas atop the meat and cheese.
Add 1/4 cup enchilada sauce to the top of each, and sprinkle over the remaining cheese.
Bake for 10 minutes until the cheese is melted and the edges of the tortillas are browned.
Remove from the oven top with tomato and green onion and serve.
