These Low Calorie Pumpkin Spice Cookies are just 50 calories each and make the perfect fall treat!I used an all-natural zero calorie brown sugar to keep the calories low, but you can swap it out for brown sugar and the cookies will still be under 100 calories (85 calories with read brown sugar). Special Tip: I like these with white chocolate chips, but semi sweet chocolate chips are really great in it too! Feel free to swap them out.

- 1 cup all-purpose flour or Gluten Free Flour
- ⅔ cup Zero Calorie All-Natural Brown Sugar
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ½ teaspoon pumpkin spice blend
- ¼ cup pure pumpkin puree
- ⅛ cup water
- ½ cup white chocolate chips
Instructions
- Preheat oven to 325 degrees and line a baking sheet with parchment paper.
- To a large bowl combine the flour, sugar, baking soda, salt, and pumpkin pie spice. Mix well.
- In a separate bowl combine the pumpkin puree, water. Whisk together.
- Pour the wet ingredients into the dry ingredients and mix together until just combined.
- Gently fold in the white chocolate chips.
- Scoop out 16 cookie balls and place on the prepared baking sheet.
- Wet your hands a little and then press the cookies down a bit to form cookie rounds.
- Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
