Ingredients You’ll Need:

  • ¾ cup unsweetened almond milk
  • ¼ teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon chocolate chips
  • 1 tablespoon All-Natural Zero Calorie Sugar (see recipe card)
  • 1-2 drops Pure Peppermint Extract

Healthy Peppermint Hot Chocolate Meal Prep and Storage

Meal Prep

  • The Night Before – Add the dry ingredients for your peppermint hot chocolate into your mug and cover. Leave on the countertop (or the fridge of you have pets) until the next morning. You can also measure the almond milk and water ahead of time and leave in the fridge for an effortless morning routine. 

Leftover Storage

  • Fridge Storage – Add any leftover latte to a jar. Close and store in the fridge for 2-3 days. Serve chilled over ice.
  • Freezer Storage – Cool then pour any leftover peppermint hot chocolate into ice cube molds, and freeze solid (about 4 hours). Then pop out of the mold and move to a freezer bag to avoid freezer burn. Will hold for 1 month in the freezer and is perfect in chilled smoothies and drinks.

Instructions
 

  • Add the milk and cinnamon sticks to a small sauce pot.
  • Bring to a boil over medium heat, then reduce heat to the lowest setting and simmer for 10 minutes.
  • Remove the cinnamon sticks and add in the cocoa, chocolate chips, sugar and peppermint extract. Whisk well until the chocolate melts and the milk gets a bit frothy.
  • Pour into a mug and serve hot.
