  • 1 pound lean ground turkey (ground chicken or beef will also work)
  • 1 egg
  • 2 tablespoons Parmesan Cheese
  • 1 clove garlic
  • 2 tablespoons breadcrumbs 
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups Low Calorie Marinara Sauce (or store-bought)
  • 4 hoagie rolls
  • 2 sliced provolone or mozzarella
  • 2 tablespoons chopped parsley (optional)

Healthy Meatball Sub Meal Prep and Storage

Meal Prep: Full disclosure, I grew up on cold and slightly soggy meatball sandwiches. But I get that is not everyone’s experience. So for you Italians out there, just make the subs and cover and eat the next day soggy and cold (yum!) And for the rest of you, I recommend making the meatballs ahead of time, then cool and store for later. Then all you need to do is reheat and assemble.
Storage: Assembled sandwiches will hold for 1 day in the fridge. Prepared meatballs and rolls (stored separately) will hold for 5 days in the fridge and 1 month in the freezer.
Reheating: Microwave meatballs and sauce for 1-3 minutes or add to a skillet, cover and heat on low until warmed through.

Ingredients
 
 

  • 1 pound lean ground turkey ground chicken or beef will also work
  • 1 egg
  • 2 tablespoons Parmesan Cheese
  • 1 clove garlic minced
  • 2 tablespoons breadcrumbs regular or Gluten-free
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups Low Calorie Marinara Sauce or store-bought
  • 4 hoagie rolls
  • 2 sliced provolone or mozzarella
  • 2 tablespoons chopped parsley optional

Instructions
 

  • Heat a large pot over medium heat and spray with olive oil.
  • Add the turkey, egg, parmesan cheese, breadcrumbs, salt and pepper to a large bowl.
  • Add in 1/4 cup marinara sauce (it’s ok if it’s cold).
  • Mix with your hands until just combined, over-mixing will make tough meatballs.
  • With wet hands (to avoid sticking) divide the meatballs into 12 portions, then roll each in your hands until you have a perfect ball.
  • Place each meatball into the hot pan and keep working until you have 12 meatballs.
  • Cook for 5 minutes, flip the meatballs and pour over the remaining marinara sauce.
  • Lower the heat to low and cook for 1 hour, until the meatballs are cooked through and the sauce is bubbling and thickened.
  • Open the rolls, and hollow out the centers on the top and bottom (this saves calories and helps the meatballs stay put).
  • OPTIONAL STEP: If you like, add the rolls cut side down to a dry pan over medium high heat to toast.
  • Add 3 meatballs to each roll, top with a little sauce, and 1/2 slice of cheese. Serve hot.

Nutrition and Calories in Meatball Sub Sandwiches

Lower the Sodium: Make your own sauce, and omit the salt from it. Also, remove the salt from the meatball recipe.
Lower the Carbs: You will have already removed 1/3 of the bread from the rolls. But you could cut those in half (down the seam) and eat this open faced sandwich style.
