- ¼ cup unsweetened cocoa powder
- ⅔ cup Zero Calorie All-Natural Brown Sugar (see recipe card for more options)
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ¼ cup unsweetened apple sauce
- 1 teaspoon vanilla extract
- 2 tablespoons water
- 16 Low Calorie Marshmallows (see recipe card)
- 2 tablespoons chopped chocolate chips (optional)

Meal Prep: You can make the cookies ahead of time and store until you are ready to serve.
Freeze Leftovers – Add to a freezer bag and pop in the freezer. Will hold for 1 month.
Refrigerate Leftovers – Cover and place in the fridge, will last up to 2 weeks.
Pantry Storage – Not recommended, you’ll eat them all! But if you must, cover and store for 5 days in the pantry.

Ingredients
- ⅔ cup all-purpose flour (or Gluten Free Flour)
- ¼ cup unsweetened cocoa powder
- ⅔ cup Zero Calorie All-Natural Brown Sugar (light brown sugar)
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ¼ cup unsweetened apple sauce
- 1 teaspoon vanilla extract
- 2 tablespoons water
- 16 Low Calorie Marshmallows
- 2 tablespoons chopped chocolate chips optional
Instructions
- Preheat oven to 325 degrees and line a baking sheet with parchment paper.
- To a large bowl combine the flour, cocoa powder, sugar, baking soda and salt. Mix well.
- In a separate bowl combine the apple sauce, vanilla extract and water. Whisk together.
- Pour the wet ingredients into the dry ingredients and mix together until just combined.
- Scoop out 16 cookie balls and place on the prepared baking sheet.
- Wet your hands a little and then press the cookies down a bit to form cookie rounds.
- Top each with a marshmallow and a sprinkle of chopped chocolate (if using).
- Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
